Birdnest with Red Dates and Lily Bulbs Recipe

This dessert soup is nourishing for the lungs and replenish Qi. This is especially good for women of all ages.

 

Ingredients:

- 120g soaked birdnest pieces (House Nest)
- 6 red dates
- 2
0g dried lily bulbs

2 cups boiling water

Crushed rock sugar, or to taste

Preparation:

Soak the Birdnest for 3 hours. Rinse well and remove any impurities.
Wash the Red Dates. Remove pits.
Wash the Lily Bulbs. Soak until tender. Drain.

Using a double boil pot to cook the Birdnest. Firstly, bring the water in the outer pot to boil. Put the Birdnest and 2 cups of boiling water into the inner pot. Simmer the Birdnest for 30mins. Then add the red dates and lily bulbs into the inner pot. Stir and simmer for another 20minutes. 20 minutes later add crushed rock sugar to taste. Soup can be served hot or put to cool down and chill in the refrigerator to serve cold.

Note: For Cave Nests, the soaking time and the Birdnest cooking time have to be increased accordingly.
